It's time to break out the banana recipes. While I love banana bread, I'm in the mood for something different. Banana cupcakes with chocolate frosting? Sounds yummy, but I don't have any cupcake liners and I don't feel like making a trip to the store. How about chocolate banana muffins with chocolate chips? Ooooh, yes!
These muffins are chocolatey, bananaey, and amazingly moist. So easy to prepare, too. Next time you've got some bad bananas, whip up a batch of these.

Banana Fudge Muffins
Ingredients:
- 1 ½ cups flour
- 1 cup sugar
- ¼ cup cocoa (I prefer Dutch-processed cocoa for this recipe.)
- 1 tsp. baking soda
- ½ tsp. salt
- ¼ tsp. baking powder
- 1 ⅓ cups mashed bananas
- ⅓ cup vegetable oil
- 1 egg
- 1 cup chocolate chips
Curtis - could you make this recipe without the bananas? Would it work, or would you subsitute something else instead? I mean... you KNOW how I just LOVE bananas!

I think they would be good if you substituted an equal amount of applesauce.

Mare--Really? No baking soda in Belgium? I didn't know that. It makes me wonder what they use over there for there yummy pastries and cakes. Here is a Web site I like that discusses the substitution. Good luck with them.
